Kev’s Birthday 2010
First post ever! Tah daaaahhhh! Kevin and I have planned to get up way early tomorrow for a five-mile walk on the levee, before it gets unbearably hot and humid. I’m hoping 6am will do it, but there’s no telling lately.
Cucumbers, beans, crookneck squash, tomatoes, eggplant, and basil coming out my ears now. Hardly have to buy food anymore!
Oh, and speaking of food!……………………
This is the Tunisian Orange Cake I made for Kevin’s birthday. It’s gluten-free, just by chance. I had some not-so-yummy gluten-free bread I wanted to use up on something where the texture wouldn’t be a problem. As it happens, it worked out very well in my test run, last week. It was one of the best cakes I’ve ever had. Seriously. It actually has no flour other than whatever flour there might be in the relatively small amount of bread crumbs the recipe calls for. The rest is basically almond meal, sugar, oil, eggs and orange and lemon zest. Then the whole thing is drenched in a syrup made from sugar, orange juice, lemon juice, cinnamon and cloves. This is obviously not diet food but it’s worth every calorie for a special occasion. Served it with a little greek yogurt and the result was, well “Yum”.
